I'm not very much help here Wormy as I'm the opposite of a foody, quite happy with a bag of Quavers and a Wagon Wheel. I quite like dum-dum's curry thing.
And the "winter warmer" style theme. Need a stodgy pudding. Fancy crumble or something with suet. Vat of proper vanilla custard.

That would clearly favour us.
We could choose between the seafood of Port Stephens, Newcastle and Lake Macquarie, or the beef and Lamb of the Valley, and round it out with Hunter wines.
Some of those restaurants around Pokolbin and some of those around Newcastle will probably have photos of iconic dishes - worth a look.

Morrisons do them, pretty pricey tho'
I think they catch scallops off the coast of Whitby, the pancetta was the bit that wasn't too british but you could substitute that with the yorkshire choritzo and it would work.
I know venison isn;t everyones taste but it is wintery and very british, I thought about beef but its a bit dull. Putting lamb on for the ozzies is bit like them selling us beef isn't it (or is that New zealand)

Porks good (although don't really eat the stuff myself) as most like it and you can fancy it up with crackling and the like, its pretty wintery and as you say British.

If you went for Wild Boar instead of pork then it would keep the theme running through the menu, think it would work aspecially as the bacon in the starter is only a minor ingredient not the main event.
Suppose Wild Boar would work on 2 counts if Mrs B started on about finances again (sorry i know were supposed to be a team for this.. )

I'd stick with the scallops, they say they catch king and queen ones on there so they must be local, langoustine are pretty bland a bit like lobster, highly overrated.
