Maybe there's a clue in the name whether we've signed a ---'un .
Of the two I'd rather have Taylor , due to the form he showed at HKR .
Dudson only featured in 11 games last season so is on the outer .
over the last two years he's

Exactly. If you compare his stats over the past two years with the props we've had in that time, he doesn't look 'good' at all. Had he played for us last season he'd have been our second lowest average metre maker amongst the props (only Shannan McP had a lower average, and to be fair to Shannan, most of his metres were made towards the touchline on a stretcher), and average or below average on pretty much every other statistic. Same applies to 2013, and when you consider we finished bottom that year, I'm not sure that a player who wouldn't have stood out in that team (jeez, even Jake Emmett had a higher average gain that year) could ever be classed as 'good'.
It may still be the case that Dudson has potential (although he's failed to fulfil it at Wigan), but we already have a number of young props with potential (Adam Walne in particular is what a 'good young prop' looks like). What we need now is a prop who is closer to the finished article and, as you say, Taylor would be a much better signing.
